Berry Yummy: Healthy Spinach Pasta Salad

Are you guys hungry? Here's a super yummy Pasta Salad recipe that has all of the things you need to get you through the day!

You will need:



A pinch of Sea salt (we get ours from a local health food market)
1 Organic vine tomatoes 
2 hand fulls of All natural spinach
A pinch  HALF a pinch of Bhut Jolokia Pepper, aka Ghost Peppers (substitute cayenne pepper you don't use this type :) 
1 ½  tablespoons of Organic red onions (optional)
1 Organic Mozzarella ball
Cheddar cheese (I use mild but you can use any type) 
1 each red and orange baby bell peppers 
Organic ground beef, or any type of meat (optional)
A pinch of Italian seasoning, garlic powder, pepper, and lemon pepper
1 cup of Garden Rotini 
2 tablespoons of Ranch dressing
½ tablespoon of unfiltered extra virgin Olive oil
½ teaspoon of Balsamic vinegar 
2 tablespoons Guacamole (optional, but I promise it tastes amazing with it! :)

Let's start with boiling our water for the pasta. Then cooking your ground beef (or meat substitute), on the stove top seasoning it with a dash of Italian seasoning, garlic powder, pepper, sea salt, lemon pepper, and Bhut Jolokia. I like to multitask whenever I'm in the kitchen so the food can get done super fast! When you have a huge family waiting to eat you have to be speedy :)

After you're done with that your water should be ready and you can add the pasta into the pot. Let it boil for 5 about minutes or until the noodles turn soft, I like them where they are not to soft nor not to hard but perfectly in the middle <3

Once everything is done cooking let the noodles and meat cool while you chop up all your fresh produce, oh yeah, and make sure you chop the cheese in little squares instead of grading it. Next add all the solid ingredients into a bowl (this is including the guac), BUT leave out the spinach! We are saving this little guy for last because spinach gets mushy very easily thus turning it into a weird texture, so let's not play around with it.


Lastly add all your spices and liquid ingredients into the bowl and mix in the goodness!

Before plating I like to let the pasta salad chill in the fridge for 5  minutes but you can eat this warm if you want. But either way you want it, cold or hot, remember to serve with spinach on the bottom and our pasta mixture on the top ^.^

Serving size is for two... or one if your super hungry (like this lil girl here ;)

Added note: All ingredients are natural or organic so that's what makes it healthy. This meal DOES have some natural fatty food i.e avocado, olive oil, cheddar cheese, and the ranch dressing because our body needs fats to live. But if you would like to make a low fat version of this recipe just leave out the products I previously listed.  :)
